Nestled in the lush greenery of Guápiles, Costa Rica, lies a cocoa farm that is not only the source of some of the finest chocolate we craft at Van Velze's Chocolates but also a testament to sustainability, heritage, and innovation. Our visit to this remarkable farm in 2015 was nothing short of magical, giving us a real insight into the dedication and passion behind the world’s best cocoa.
A Farm Rooted in Tradition and Excellence
What makes this farm so special is its owner, Hugo, who took over the land from his father and took the bold step of replanting it entirely with Trinitario cocoa beans. Trinitario is one of the world’s most prized cocoa varieties, known for its rich aroma and fine flavour. The result is a bean with exquisite fruity notes, which we were fortunate enough to taste straight from the pod, an unforgettable moment filled with vibrant, citrusy, and floral flavours that hint at the exceptional chocolate they will become.
A Sanctuary for Wildlife
Beyond producing top-quality cocoa, Hugo’s farm is part of a larger conservation effort supported by the National Geographic programme. The farm serves as a protected habitat for various wildlife species, including the elusive three-toed sloths. Typically found high up in the rainforest canopy, these gentle creatures also thrive here, offering researchers a rare opportunity to study them in a more accessible environment. Walking through the farm, surrounded by towering cocoa trees and the sounds of nature, we felt deeply connected to the land and its many inhabitants.
Innovation and Economic Empowerment
Hugo’s vision extends beyond farming; he has added incredible value to his operation by investing in cocoa processing machinery. This investment has enabled him to produce and sell cocoa liquor (100% pure cocoa mass) rather than just raw beans. By doing so, he not only enhances the quality of the final product but also secures better income for himself and his workers. This shift has provided more employment opportunities in Costa Rica, reinforcing the importance of local production and sustainability in the chocolate industry.
